EASY VEGAN PASTA


 QUICK BASIL AND SPINACH PASTA SAUCE


Hello! I apologize for the lack of posts this month, but a lot has been going on. I hope you guys are doing alright.

But don't think that I'm not brainstorming while I'm not writing posts! 
It's summer time, so my garden is obviously doing it's full time job by providing vegetables. And if you know anything about spinach, it grows in abundance. I think the person who came up with ''when it rains, it pours'', was talking about how much spinach he had in his garden. 


That being said, you can imagine that I have to come up with ways to eat spinach and not keep eating the same dish. So I had some fresh basil and spinach and decided to do a pasta sauce. It's super easy and creamy and I love it!  This recipe is for about 3 or maybe 4 people.


You will need :

  • basil (handful)
  • spinach (I didnt measure, so I guess, a lot)
  • 2 cloves garlic
  • rice cooking cream (optional)
  • nutritional yeast (optional)
  • olive oil
  • salt
So you just chop up the basil and the garlic, and then fry it in a bit of olive oil. 
When garlic starts to turn golden, add the spinach and some water.


Once you've added the spinach and water, put the lid on and put the stove to low heat and let the spinach cook.
Keep checking on your spinach and when it's soft, put it all into a blender and blend it together.
You should get a green creamy consistency. Now is the time you add the salt, water (optional) and the rice cooking cream. I don't usually put cream in my soups and sauces because I think it's redundant, but I had some of it leftover from a mushroom sauce.
Oh, and also, put in some nutritional yeast while you're stirring.
